Borlotto Lingua di Fuoco is a mid-early climbing French bean that produces long, red-mottled pods filled with cream-colored, red-splashed beans. The beans are a great, both as green pod beans (I love eating them fresh from the stalk) and as a dry bean. No matter what the use, the beans have an excellent flavour. Their colour makes them especially fun for children, and the red splashes on the pods make them particularly easy to find amongst the foliage.

The color of the beans themselves does fade upon cooking, but never fear—the excellent flavour remains. Pick young and eat whole or use the dry bean in soups, stews and casseroles.
